Apple Pie Roll Ups

Who doesn't love apple pie? This recipe has all the fun of a traditional apple pie but half the labor - no need to make a pie crust here! You can complete these yummy roll ups with just bread. These treats are covered in a tasty cinnamon sugar coating on the outside, and sweet apple pie filling on the inside.

Apple pie has to be one of my all-time favorite desserts. However, it can be inconvenient and time-consuming to go out of your way to make a pie-crust, especially when you're craving something sweet in the moment and want it quickly. These roll ups are the perfect solution. This recipe is so quick and easy and can be made with just sliced bread instead of traditional pie crust.






Bread crust:

  1. Sliced bread

  2. Canola oil

Cinnamon sugar topping:

  1. 1/2 c raw sugar

  2. 1/2 tbsp cinnamon

Apple Pie Filling:

  1. 2 honeycrisp apples (1.5c chopped)

  2. 1.5 tbsp earth balance butter

  3. 1/3 c brown sugar

  4. 1/4 tsp cinnamon

  5. 1-2 tsp lemon (depending on preference)

  6. 2 tsp cornstarch

  7. 1/2 c water





Apple Pie Filling:

  1. Add butter to sauce pan and let it melt, then toss in apples, lemon juice, water, brown sugar, corn starch, and cinnamon and let all of the ingredients simmer until the apples soften. This takes about 6-10 minutes on a low to medium heat.

Bread Crusts + Assembly:

  1. Cut the crusts off of your bread and then roll out the slices with a rolling pin (or just flatten with a heavy pan!)

  2. Add the apple pie filling in the center and roll the bread.

  3. Set up two bowls - one with canola oil and one with the cinnamon sugar topping

  4. Lightly dip the rolls in canola oil and then in the cinnamon sugar mixture, making sure each roll evenly and heavily coated

  5. Put your rolls in the oven at 350 degrees for 15-17 minutes.
