If you're trying to sneak in more veggies into your food, this recipe is for you! The avocado adds a thick and creamy consistency to this pudding that is virtually undetectable in the midst of all the chocolatey goodness!
If you're a bit skeciptal, that's completely understandable. I was too when I first heard about avocado in chocolate pudding. However, avocado is truly a miracle ingredient in various vegan and eggless desserts because it adds a beautiful creamy texture without any extra flavor that would disrupt the dish. Once the chocolate is added in, you won't be able to tell there is any avocado in here at all, I promise!
1 large avocado
3-4 teaspoons of cocoa powder (depending on the size of your avocado/how chocolatey you want it)
2 teaspoons honey (you can substitute with maple syrup as well)
2 tablespoons powdered sugar
1/4 cup of unsweetened vanilla almond milk (add more or less depending on preferred thickness)
Pinch of sea salt for garnish (optional)
Simply pop all of these ingredients into a food processor and blend
