Peach Crumble

A quick and easy version of peach crumble that is absolutely delicious!!

Not to toot my own horn, but this is restaurant/bakery quality if I do say so myself! I am completely satisfied with how amazing this turned out. Plus, despite how impressive it may look, it was actually really easy to throw together. There are only two components, the filling, and the crumble. And each can be mixed together with ease!

Peach Filling:

  1. 2 c peaches

  2. 2 tbsp earth balance butter (melted)

  3. 1/3 c brown sugar

  4. 2 tbsp cornstarch

  5. 2 tsp lemon juice

  6. 1/4 tsp cinnamon

  7. 1 c water

Crumble Topping:

  1. 1 c flour

  2. 5 tbsp earth balance butter (melted)

  3. 1/2 c brown sugar

Peach Filling:

  1. In a bowl mix together your melted butter, brown sugar, cornstarch, lemon juice, and cinnamon powder. Make sure there are no clumps!

  2. Now add in your peaches and water

  3. Transfer the mixture to a heavy bottom pan and heat it on the stove for about 5 minutes, until the peaches soften and the liquid thickens well (this is why the cornstarch is important)

Crumble Topping + Assembly:

  1. In a bowl, mix together your flour and sugar.

  2. Now add in your melted butter, and mix it in slowly until clumps start forming in the mixture. This is what we want - crumbles!

  3. Optional: grease the bottom of your glass baking dish with some butter

  4. Add in your peach filling, and then evenly sprinkle your crumble mixture on top

  5. Pop your baking dish in the oven at 350 degrees for about 20 minutes

  6. Serve warm with ice cream on top!
